Last Saturday, I got a chance to sit down with some of Bo’s key people. Mr Jojo Cayabyab, Ms Ana Benitez, Mr Jancy Seva, Ms Anna Francesca Rosales, and Ms Joy Anne Reynaldo. They shared how Bo’s Coffee started, how they serve good coffee along with their yummy pastries and dishes, and their current and upcoming stores in Metro Manila.

Who’s Bo?
According to Mr Jojo Cayabyab, Bo’s operations manager, Bo’s Coffee was named after Mr Bo, who is actually a person who taught Mr Benitez, Bo’s founder, a good knowledge about coffee.

Bo’s difference
“What makes Bo’s different is that we value freshness” Mr  Jojo when asked what makes Bo’s Coffee different.

According to him, the secret of Bo’s is that they serve coffee from a  freshly roasted coffee beans. And that to make make a really good coffee, we should understand that in preparation, each process should be done properly within a certain time frame. They use these knowledge to carefully train their baristas in order to bring customers desirable coffee taste.

To add to Bo’s customers coffee experience, Bo’s Coffee have its own commissary who handles their pastries and dishes. They make sure that all the cakes, cookies, or pastas are fresh and delectable.

Bo’s Coffee now operates more than 50 outlets strategically located in Bohol, Bacolod, Cagayan de Oro, Cebu, Davao, Iloilo, Metro Manila, Samar, Tacloban, Tagaytay, and Zamboanga. This year, they are targeting to open six more stores.

During our two-hours conversation, I was served with their latest summer offering. A Biscotti Amaretto and Super Moist Cake. Biscotti Amaretto is a blended coffee with biscotti and amaretto syrup topped with whipped cream, dark chocolate drizzle, and crushed biscotti sprinkles. I liked how it refreshed me, it just feels right while sipping it. The Super Moist Cake on the other hand is a chocolate cake that is.. well, super moist. The thing I liked most about the cake is that, its not too sweet. I like that in a cake so that I can have a huge slice of it.

Before we ended, Mr Jojo showed us their Bo’s Trail Mix (Php 70), it is made up of cranberries, peanuts, pumpkin seeds, cashews, dried mangoes, and raisins.
